You should use a hook sized #1-#2 they are small fish and they dont bite bigger ones really. To fish for Crappie and Bluegill it is best to use a telescopic rod or a match rod, both of these are effective at using baits. The larger hooks 3/0 or so can produce up to 5 and 6 pound trophies like the fish below.
